Banana Nut Bread & Candied Pecans


Candied Pecans put a Cowboy spin on traditional Banana Nut Bread


Ingredients

  • 1/2 C Butter

  • 1 1⁄2 C Sugar

  • 1 t Vanilla

  • 2 Eggs, beaten

  • 3 ripe Bananas, smashed (about 1 C)

  • 1⁄4 C Milk

  • 2 C Flour

  • 1⁄2 t Salt

  • 1⁄2 t Baking Soda

  • 1⁄2-1 C Chopped Pecans, Candied Pecans (see Cowboy Cupcake post for recipe) or Walnuts (all optional)

Instructions

  1. Preheat oven to 350°.

  2. Grease and flour 2 loaf pans or line 24 muffin tins with paper liners.

  3. In large mixing bowl, cream together Butter & Sugar. Add Vanilla & Eggs and mix well.

  4. In medium mixing bowl combine dry ingredients, add to Butter and Sugar mixture alternately with Bananas & Milk until thoroughly moistened.

  5. Pour batter into loaf pans or muffin tins.

  6. Bake at 350° for 60-75 minutes for loaf pans, 25-30 minutes for muffins.

  7. Remove and cool on wire cooling racks.

  8. Enjoy!
