Banana Nut Bread & Candied Pecans
Candied Pecans put a Cowboy spin on traditional Banana Nut Bread
1/2 C Butter
1 1⁄2 C Sugar
1 t Vanilla
2 Eggs, beaten
3 ripe Bananas, smashed (about 1 C)
1⁄4 C Milk
2 C Flour
1⁄2 t Salt
1⁄2 t Baking Soda
1⁄2-1 C Chopped Pecans, Candied Pecans (see Cowboy Cupcake post for recipe) or Walnuts (all optional)
Preheat oven to 350°.
Grease and flour 2 loaf pans or line 24 muffin tins with paper liners.
In large mixing bowl, cream together Butter & Sugar. Add Vanilla & Eggs and mix well.
In medium mixing bowl combine dry ingredients, add to Butter and Sugar mixture alternately with Bananas & Milk until thoroughly moistened.
Pour batter into loaf pans or muffin tins.
Bake at 350° for 60-75 minutes for loaf pans, 25-30 minutes for muffins.
Remove and cool on wire cooling racks.
